For the marinade
- 750 g Chicken Thighs skinless but bone in
- ¼ tsp Turmeric
- 1 tsp Chilli Powder add more if you like it really hot but this works
- 1½ tsp Coriander Powder
- ½ tsp Cumin Powder
- ½ tsp Black Pepper freshly ground
- 2 tsp Ginger and Garlic Paste
- 2 tsp Lemon Juice
- 1 tbsp Yoghurt we tend to use Greek yoghurt which is slightly thicker
- 2 tbsp Tomato Ketchup we know, but it works!
- 1 pinch Salt
Ingredients to add when cooking
- 3 tbsp Coriander fresh and finely chopped
- 1 tbsp Curry Leaves finely chopped
- 3 tbsp Oil we tend to use rapeseed oil for Indian food
Put the skinless chicken thighs (bone in is really important for flavour and even cooking) in a bowl. Add all of the ingredients for the marinade and then mix really well so that every piece of chicken is coated in the marinade. Set aside for at least 1 hour, longer if possible
When you are ready to cook, heat the pan on a high heat until it is really hot. Add the oil and wait a few seconds (for that to heat up) before adding the chicken in one even layer. Sear for 5 minutes until it is browned all over
Reduce the heat to low, cover with a lid and leave to cook for around 10 minutes before taking the lid off and giving it a stir. Put the lid back on and leave for another 5 to 10 minutes until the chicken is cooked and tender
Whilst the chicken is cooking, finely chop the coriander and the curry leaves. When the chicken is cooked and tender, remove the lid and add the chopped coriander and curry leaves. Mix well and cook on a medium heat for about 3-4 minutes
Serve with rotis or chapatis (our preference is rotis) and enjoy!
