- 4 Apples we use Granny Smiths but any sharp apple will work
- 400 g Caster Sugar
- 200 ml Water
- 2 Lemons juiced
Peel, core and chop the apples (this is best done as quickly as you can to stop the apples from discolouring through oxidisation), put the apples in a container and put them in the freezer. We usually leave them for a couple of hours to get them really frozen
Over a low heat dissolve the sugar in the water. Make sure every grain has dissolved and then take it off the heat. Allow to cool. You've just made sugar syrup!
When they are frozen, take the apples out of the freezer and put into a food processor along with the sugar syrup and the lemon juice. Whiz it up until the mixture is nice and smooth and then pass through a sieve
Churn it in an ice cream machine until it is soft but frozen. If you don't have an ice cream machine just put it in the freezer and break up with a fork from time to time.
