Ginger Nuts

Ingredients

  • 170 g Plain Flour
  • 50 g Butter
  • 80 g Light Brown Sugar
  • 2 tbsp Golden Syrup
  • 1 small Egg beaten
  • ½ tsp Bicarbonate of Soda level
  • 1 tsp Ground Ginger level

Instructions

  • Line a baking tray (or two if you don't think 20 biscuits will fit on one) with grease proof paper
  • Put the flour, bicarbonate of soda and the ground ginger into a bowl and give it a quick mix. Next add the butter and rub it between your finger tips until it resembles bread crumbs
  • Add the sugar, golden syrup and egg and mix together to form a dough. Roll the dough out on a lightly floured surface until it is about 8mm thick (about a third of an inch in old money) and then, using a 50mm straight sided cutter, cut out the biscuits and put them on the baking tray allowing a little space for expansion
  • Once you have used up all the dough put the baking tray(s) in the fridge to relax the gluten for 20 minutes and, whilst they are resting, preheat your oven to 180°C, Gas Mark 4
  • After 20 minutes, take the biscuits out of the fridge and bake them in the pre-heated oven for 10-15 minutes until they are golden brown. Remove them from the baking tray with a palette knife and place them on cooling rack to cool and for the magic to happen and create that snap! Enjoy with a cup of tea or coffee and, if you have any left (which you probably won't) you can break them up and use them as the perfect base for a cheesecake
