- 400 g Pasta Flour tipo 00
- 4 Eggs
Put the flour in a bowl and make a well in the middle of it
Break the eggs into a separate bowl and whisk them with a fork
Pour the eggs into the well you have made in the flour and mix, bringing in a little more flour gradually until you have brought the whole lot into a ball
Once you have a ball of dough you need to knead it. Put the ball on a floured surface and knead until the dough is smooth and elastic. If it still feels rough and floury it isn't done! It takes about 10-15 minutes but it really is worth the effort!
One the ball of dough is smooth and elastic, wrap it in cling film (or better still a biodegradable ziplock bag - we're not keen on cling film if we can avoid it) and put in the fridge for at least half an hour
After at least half an hour in the fridge, bring it out and roll it out to be shaped into whatever pasta you are going to use!
