- 2 cloves Garlic
- 1 bunch Spring Onions with one onion reserved for garnish
- 2 green Chillies deseeded
- 1 Lime juiced
- ½ tsp Ground Cinnamon
- 1 tsp Thyme dried
- 1 tbsp Brown Sugar demerara is good
- 1 tsp Allspice ground
- 1 tsp Salt
- 4 Chicken Breasts
Roughly chop the garlic, chilli and spring onions and drop into a blender. Add the sugar, lime juice, allspice, thyme, cinnamon, salt and 2 tablespoons of water and blend into a paste
Put the chicken into a dish just big enough for the chicken and the marinade (this ensures that as much marinade as possible gets to the chicken) and allow to marinate for at least 2 hours - longer is better
When ready to cook, heat the barbecue to a high heat on one side and a lower heat on the other. Cook the chicken on the hot side until it is slightly charred (about 10 minutes) and then move it to the slightly cooler side to finish cooking (about another 10-15 minutes)
