- 100 g Red Lentils thoroughly washed
- 2 Tomatoes finely chopped
- ½ small Onion finely chopped
- ½ tbsp Cumin Seeds
- ½ tsp Mustard Seeds
- ½ tsp Coriander Seeds crushed
- ¼ tbsp Chilli Powder
- ½ tsp Ground Coriander
- ½ tsp Turmeric
- ½ tsp Garam Masala
- 2 tsp Dried Fenugreek Leaves (Methi)
- ¼ tbsp Mango Powder (Amchur)
- 1 Green Chilli finely chopped
- 1 tbsp Coriander Leaves finely chopped
- Lemon to taste
- ½ ltr Water
- 1 pinch Salt
Heat 1 tbsp oil in a pan. Add the mustard seeds, cumin seeds and crushed coriander seeds
When the mustard seeds start to pop add the onions. Cook the onions until they are golden
Add the tomatoes and green chilli. Cook for 5 minutes and then add chilli powder, turmeric, coriander powder and salt
Cook until the tomatoes have softened and the mixture leaves oil on the sides. You shouldn't be able to distinguish the tomatoes from the onions. Add a few drops of water if it sticks at all
When it's ready, add the washed lentils, sauté in the mixture for 1 minute and then add the water
Lastly add fenugreek leaves, dry mango powder and garam masala. Stir and cover the pan with a lid
Let the lentils cook on medium heat for about 30-40 minutes or until tender
Add the chopped coriander and lemon and enjoy!
