- 2 Banana Shallots finely chopped
- 175 ml Port
- 175 ml Red Wine
- 800 ml Beef Stock
- 1 sprig Rosemary
- 1 Bayleaf
- 50 g Butter
- 2 tsp Olive Oil
In a large frying pan, heat the olive oil and, when hot, add the shallots and cook until golden. This will take about 10 minutes
When the shallots are golden, add the port, wine, rosemary and bayleaf and simmer until reduced by half. This will take at least 10 minutes
Next add the beef stock and simmer to reduce by half again. This may take up to 20 minutes
When the sauce is reduced pass it through a fine sieve into a clean pan. Add the butter and whisk in to the sauce. Season to taste and serve
