Instructions
Toast one side of each slice of bread under a hot grill. Meanwhile slice the goat's cheese into two equal portions. When the first side of toast is golden and toasted, turn the bread and put the goat's cheese on top. Grill until the cheese starts to bubble and begins to colour slightly
Make a simple balsamic dressing by putting 1 tablespoon of extra virgin olive oil and 1 teaspoon of balsamic vinegar in a jar with a tight fitting lid. Shake it up to combine and then season with salt and black pepper. Dip a salad leaf into the dressing to test for seasoning and adjust as necessary
Arrange the salad leaves on a plate and drizzle with the balsamic dressing. Take the grilled goat's cheese on toast and place on the plate. With the remaining balsamic vinegar, drizzle over the cheese. Enjoy with a glass of something cold!
