Stuffed Tomatoes

Ingredients

  • 1 small Onion finely chopped
  • 1 clove Garlic finely chopped
  • 1 red Chilli finely chopped (optional)
  • 500 g Beef Mince good quality, we usually buy 12% fat
  • 2 tbsp Tomato Ketchup
  • 1 tin Chopped Tomatoes
  • 4 large Beefsteak Tomatoes
  • 3-4 New Potatoes pre-boiled
  • 1 tbsp Butter to fry the potatoes
  • 1 tbsp Olive Oil old slag, save the extra virgin for salads
  • 1 tsp Salt
  • 1 tsp Pepper freshly ground
  • 1 tsp Sugar it makes all the difference!

Instructions

  • Heat the oil gently in a pan until hot and then add the onions. Cook gently until the onions are soft and translucent but not coloured. Add the garlic and chilli (if using) and cook for a further 3 minutes
  • Add the beef mince and cook until browned all over, then add the tomato ketchup. Cook out for a couple of minutes and then add the tomatoes. Add the salt, pepper and sugar and simmer for 30 minutes
  • Slice the potatoes to about 3-4mm thick slices and fry gently in butter until they have started to take on colour. Put aside
  • Whilst the beef mince 'stuffing' is cooking, carefully take the tops off the beefsteak tomatoes and scoop out the flesh from the inside. Finely chop the flesh and add it to the 'stuffing'
  • When you are ready to prepare your stuffed tomatoes (keep in mind that all of the above can be done in advance and frozen or kept in the fridge until ready to eat) pre-heat the oven to 180℃. Fill the hollowed out tomatoes with some of your stuffing mixture, top with some of the sliced potatoes and pop in the oven for around 45 minutes until the tomatoes are soft and tender. Give the stuffed tomatoes a few minutes to cool slightly as the water in the tomatoes will be scalding hot immediately out of the oven! Enjoy with a glass of whatever you fancy!
