Tasty Mussels with Tomato and Pasta

Ingredients

  • 1 kg Mussels
  • 250 g Cherry Tomatoes we try to buy heritage tomatoes when we can
  • 250 g Ditaloni Pasta if you can't get it macaroni will be ok
  • 2 cloves Garlic
  • 1 pinch Chilli Flakes
  • 1 tbsp Olive Oil old slag is best, save extra virgin for salads!
  • 1 tbsp Parsley chopped

Instructions

  • Wash the mussels and discard any that are broken or are open and don't start to close when they are tapped on a hard surface
  • Boil some water in a large pan and, when boiling, add the pasta and cook according to the packet timings (usually about 12 minutes)
  • Heat the olive oil in a sauté pan over a medium heat. Cut the tomatoes in half and add them to the warmed oil. Cook gently to soften them.
  • When the tomatoes are softening, grate the garlic over the tomatoes and then add the pinch of chilli flakes. Stir well.
  • Add the mussels to the pan, cover and cook for 4 minutes until they have all opened.
  • Add the cooked and drained pasta to the pan and mix well.
  • Sprinkle with the parsley and serve immediately. Enjoy with a glass of sauvignon blanc!
