- 1 kg Blackcurrents stalks removed and berries washed
- 900 ml Water
- 1.65 kg Caster Sugar
- 1 whole Lemon juiced
Put the washed blackcurrants into a large heavy bottomed saucepan or a jam pan. Add the water and lemon juice and bring to a very gentle simmer. Simmer for 2 hours until the fruit is soft and pulpy and the liquid is deep and rich in colour
Add the sugar and bring the jam to a boil. Boil hard for 5 minutes and then test of for a set. You have reached a set when you drop a small amount of jam onto a cooled plate and then run your finger through it. If it wrinkles, it is ready and you have reached a set
Pour into steralised jars and put the lids on as quickly as you can. Leave it for 24 hours and then try very hard not to eat it all too quickly!
