Burger Relish

Ingredients

  • 1 small Red Onion finely chopped
  • 3 cloves Garlic finely chopped
  • 550 g Tomatoes skinned and chopped
  • 1 small Chilli finely chopped
  • 1 tbsp Paprika
  • 1 tbsp Cornflour
  • 150 ml Red Wine Vinegar
  • 75 g Sugar
  • 50 g Butter
  • 100 g Gherkins finely chopped

Instructions

  • Melt the butter in a pan and fry the onion gently until the onion is translucent but not coloured in any way
  • Add the garlic and the chilli and cook for another two minutes without colouring the onion or garlic
  • Add the tomatoes and cook for another 10 minutes until most of the tomato has broken down
  • Add the paprika and cook for another 2 minutes
  • Add the vinegar and sugar and stir until the sugar has dissolved, then bring to a boil
  • Once boiling, turn the heat down to a simmer and cook for at least 30 minutes until the relish reaches jam consistency
  • Add a little water to the cornflour, stir into the relish and bring the mixture back to a boil and cook for one minute until the relish has really thickened
  • Take the pan off the heat and stir in the chopped gherkin
  • Pour the relish into sterilised jars. It will keep in the fridge for months!

Notes

This relish is excellent but goes particularly well with our Best Burger Ever!
