Salmon Fillet with Wasabi Mash and Mediterranean Peppers
We are not big fish cooks (as you will find on this website) but we do like fish! We came across this dish in a restaurant in Belgium and decided to see if we could replicate it at home. We think we did a pretty good job and it is now a favourite of ours.
Salmon Fillets with Wasabi Mash and Mediterranean Peppers

Ingredients
- 2 Salmon Fillets
- 3 Peppers red, green and yellow
- 3 Potatoes large and peeled
- 1 tube Wasabi Paste
- 2 tbsp Olive Oil
- 125 g Butter or more!
- Salt to taste
Instructions
- Deseed and slice the peppers thinly. Put a large frying pan on a medium heat, add the oil and then, when hot, add the peppers. The peppers will take all of the 45 minutes to cook and soften. Add salt to taste but they will need salt!
- Whilst the peppers start to cook, peel, wash and cut up the potatoes ready to make the mash. Place in a pan of cold water and bring to the boil. Don't add any salt until the water is boiling if you are using stainless steel pans as the salt in cold water will stain the pans!

- When the potatoes are cooked make the mash. Add 100g of the butter (and if you think it needs more add it – this isn't a low calory dish!) and mash the potatoes until they are creamy smooth. When you've done this add half the tube of Wasabi paste. Taste and adjust as necessary – you won't need less but you may need more to get that Wasabi hit!

- Mash made, peppers cooked, cook the salmon. Melt the remaining 25g of butter in a pan with a little oil to stop it burning. When foaming add the salmon skin side down. Cook for about 5 minutes until the salmon is two thirds cooked through. Turn the salmon and cook for a further 3 minutes basting constantly with the butter. Leave it to rest for at least 3 minutes before you serve!

- Serve with a spoonful of the wonderful Wasabi mash, place the salmon on top and the peppers to one side and enjoy!
