Spanish Tortilla

We learned this authentic Spanish tortilla recipe whilst on holiday in a town called Javea on the Marina Alta eastern coast of Spain. We had rented a villa and found some Spanish recipe books in the kitchen so we thought we’d try and cook something. Having previously lived in Spain for a few years we were fortunate enough to be able to read Spanish. Tortilla EspaƱola was one of the dishes we cooked and one that we have been cooking ever since,

Tortilla EspaƱola

Equipment

  • Medium sized frying pan

Ingredients

  • 1 large Spanish Onion they're available everywhere but any large white onion is ok
  • 2 large Potatoes or 3 smaller ones
  • 4 large Eggs
  • 2 tbsp Olive Oil old slag, not extra virgin!
  • Salt and Pepper for seasoning

Instructions

  • Heat the olive oil in a medium sized frying pan
  • Peel and finely chop the onion. You really do want the onion to be as finely chopped as you can. Add the onion to the pan and fry gently. You do not want to fry the onion hard as it will turn brown and bitter very quickly. The aim is to get the onion to the soft and translucent stage without any colour. This will take a good 15 minutes
  • Peel the potato and cut into relatively thin chips. When the onion is soft and translucent push it to one side of the frying pan and put the potato in its place. Carefully put the onion on top of the potato and spread the potato across the pan
  • Cook very gently for at least half an hour before turning the potatoes and mixing with the onion. Everything should be soft but not coloured
  • Break the eggs into a large bowl and whisk until well scrambled. Season with the salt and pepper and then add the onion and potato mix. Mix well and then return to the frying pan
  • Cook the tortilla gently until it is golden on the underside. Place a plate over the frying pan and quickly flip the tortilla onto the plate. Return it to the pan by sliding it carefully off the plate and cook until the underside is golden.
  • Using a new plate, place it over the frying pan and flip the cooked tortilla onto it. Serve warm but not hot either on its own or with some tapas
