Chicken Fajitas
Now, we know that you can buy that very well known brand of fajita kit but there is nothing like home made fajitas. We don’t make our own tortilla wraps and we don’t always make our own guacamole or tomato salsa, but the we do make our own fajita spice mix. This is how we like them!
Chicken Fajitas

Ingredients
- 1 Chicken Breast
- 1 Red Onion
- 1 Red Pepper
- 1 Green Pepper
- 1 Yellow Pepper
- 2 tsp Fajita Spice Mix see link above for our spice mix
- 300 ml Water not boiling but hot is best
- 1 tbsp Oil don't use olive oil, it will burn – we use rapeseed oil
To Serve (some or all!)
- Guacamole
- Soured cream
- Tomato Salsa
- Grated cheese
Instructions
- Slice the chicken into thin strips. Deseed and slice the peppers into thin strips

- Heat a wok until it is very hot. Add the oil and then the chicken. Stir fry until the chicken is beginning to take on colour. It doesn't have to be fully cooked at this point because there is still some cooking to do

- Add the sliced onions and peppers and stir fry with the chicken until they start to soften, then add the fajita spice mix and mix well. Add the water and cook until the water has all but evaporated. You will be left with a deliciously soft spicy mix of chicken and peppers

- We make our fajitas by laying out a tortilla wrap, spoon on some of the chicken and pepper mix, spoon on some tomato salsa, a little guacamole, some soured cream (one of us can't eat cream so we just leave it out) and top with some grated cheddar cheese. Fajitas are deliciously messy to eat which makes them all the more fun to have!
