Indian Spiced Chicken Wings
This is a dish that we saw on television and so couldn’t resist giving it a try. We’re giving the full recipe here that will serve four people, but you can easily half the ingredients to make it work for two people. Frankly, we are only two but we loved them so much we ate the lot! One of us is very highly lactose intolerant which is why we lean towards Asian food a lot as there is very little lactose in it. Where we do use foods that would normally include lactose, we buy lactose free versions, they work just as well. The original recipe had okra in it but we hate okra, so we left it out. If you like it just slice up three fingers and fry with the chillies and garlic for the garnish. So if you like chicken wings, this is really worth a go!
Indian Spiced Chicken Wings
Ingredients
For the Wings
- 1 kg Chicken Wings
- 2 tbsp Ginger Paste you can buy it in any supermarket and it keeps for ages!
- 1 tbsp Garlic Paste also very widely available
- ½ tbsp Tumeric
- 1 tbsp Fenugreek Leaves
- 2 tbsp Kashmiri Chilli Powder
- 2 tsp Garam Masala
- 200 ml Greek Yoghurt we use lactose free which works just fine
- 2 Lemons juice only
For the Garnish
- 2 tbsp Fresh Coriander chopped
- 2 Red Chillies sliced
- 4 cloves Garlic sliced, not chopped
Instructions
- Take the wing tips off the chicken and discard. They would burn if you left them on
- Put the ginger paste, garlic paste, turmeric, fenugreek leaves, chilli powder, garam masala, lemon juice and yoghurt into a large bowl and mix well. Add the chicken wings, stir to ensure everyone is coated, cover the bowl and pop it in the fridge for at least 24 hours
- When you are ready to cook the wings, put your oven on at the highest temperature it will go. Forget temperatures, just as high as your oven goes! Line a large baking sheet with baking parchment paper (this is very important because the wings will stick to the baking sheet and make it a nightmare to clean!) and, when the oven is as hot as it will go, put the baking sheet with the wings into the oven.
- Bake the wings for 30-35 minutes. You are looking for them to be charred and bubbled skins, but not burnt!
- Whilst the wings cook, gently fry the red chillies and garlic for the garnish until the chillies are crispy and the garlic is crisp but not burnt.
- When the wings are ready, simply put them in a bowl, sprinkle with the garnish and serve. Remember, they will be red hot, so it is worth giving them a few minutes to cool so that you don't burn your fingers!
