Classic Murg Methi
This simple fenugreek recipe is wonderful! It makes such a delicious curry and it is really easy to make. Having made it once, it soon became a favourite of ours. (Hot tip: Use the rest of the can of tomatoes to make a tasty Arabiatta sauce!)
Classic Murg Methi

Ingredients
- 4 tbsp Rapeseed Oil
- 1 medium Onion finely chopped
- 2 cloves Garlic grated or finely chopped
- 50 mm Root Ginger grated or finely chopped
- 700g Chicken Breast cut into 25mm cubes
- 4 tbsp Canned Chopped Tomatoes
- 3 green Chillies seeded and finely chopped
- 1 tsp Turmeric
- ¼ tsp Chilli Powder
- 1 tsp Garam Masala
- 1½ tbsp Fenugreek Leaves dried
Instructions
- Put a sauté pan on a medium heat. Add the oil and, when it's hot, add the onion
- Fry the onion for 10 minutes or until it is light brown, then add the garlic and ginger and fry for another 2 minutes
- Add the chicken and brown for a couple of minutes before adding the tomatoes and green chillies. After a couple of minutes and the turmeric and a pinch of salt. Cook for 5 minutes stirring all the ingredients together
- Fry for another couple of minutes and then add the chilli powder and garam masala. Cook for a minute or so and then crumble the fenugreek leaves into the pan
- Mix in 360ml of hot water, or enough just to cover the chicken, and bring to a simmer. Cover and cook over a low heat for 20 mins, then serve
