Chicken with Black Bean Sauce
Chicken with Black Bean Sauce is a wonderful Chinese dish but so many Chinese restaurants seem to make a flavourless dish full of monosodium glutamate which is, frankly, unpleasant. It took us a long time to get this chicken with black bean sauce recipe right, but we think this version is pretty good and it only has six ingredients! We usually serve this with Singapore Fried Rice.
Chicken with Black Bean Sauce

Ingredients
- 2 Chicken Breasts cut into 1.5cm x 1.5cm cubes
- 1 tsp Cornflour
- 2 tbsp Soy Sauce light not dark
- 1 tin Black Beans you can buy dried and soak them overnight and then cook them but we prefer the tinned beans
- 1 large Red Chilli sliced into rings with seeds removed
- 1 tbsp Oyster Sauce
Instructions
- The first thing to do is to 'silk' the chicken. Mix the cornflour with 1 tbsp of Soy Sauce and coat the chicken with it. Leave it for 10 minutes to marinate. This really does make a big difference to this simple dish

- Slice the chilli and remove the seeds. This such an integral part of this dish but do be careful you will end up with a lot of chilli oil on your hands! Don't touch any sensitive parts of your body before you have thoroughly washed your hands!

- When you're ready to cook, heat a tablespoon of oil in a frying pan and, when hot, add the chicken. It will only take a couple of minutes on each side to cook. The 'silking' will ensure a lovely golden brown edge to the chicken

- Add the black beans, the chilli, the oyster sauce and the remaining soy sauce and cook until the sauce thickens slightly. That's it! Chicken in black bean sauce! Enjoy
