Chole

This is a very common street food dish in the streets of Delhi. Usually it is served with a bread called Kulche but we just cook this dish on its own. It is one of the most stunning dishes and we love it.

Ingredients

  • 1 medium Onion very finely chopped
  • 3 cloves Garlic grated
  • 25 mm Root Ginger grated
  • 1 Tomato skinned and deseeded
  • 1 tsp Red Chilli Powder
  • 1 tsp Turmeric
  • 2 cans Chickpeas in Water 400g cans
  • 2 dried Red Chillies whole
  • 1 Bayleaf

Instructions

  • Fry the onion for around 5 minutes until it is beginning to soften then add the grated garlic and ginger and the chilli powder and turmeric
  • Continue to fry the onions etc., until the onions are really soft but not browned. Once they are soft, pour in the chickpeas along with the water from the can and add the dried chillies and bayleaf
  • Gently mash some of the curry to break up the chickpeas and thicken the sauce
