Pollo Asado
Pollo asado is simply Spanish for roast chicken. That said, there’s roast chicken and roast chicken. Our favourite restaurant for roast chicken is called La Oca (which rather strangely means ‘the goose’ which we have never seen on the menu) in the Spanish town of Sitges and is a restaurant where chickens are spit roasted in the front of the restaurant and then served directly from the spit to customers in the restaurant behind. We’ve never managed to fully replicate the recipe that they use but this is as close as we’ve managed to get!
Pollo Asado

Ingredients
- 1 whole Chicken
- 2 cloves Garlic finely grated or minced
- 2 tsp Paprika
- ¾ tsp Chilli Powder
- 1 tsp Oregano
- 2 zested Lemons
- 60 g Butter
- 1½ tsp Salt to taste
- Pepper to taste
Instructions
- Put the butter, lemon zest, oregano, paprika, chilli powder and garlic in a bowl and mix well ensuring that the butter is soft enough to massage into the chicken
- Massage the butter mix all over the chicken and under the skin where possible. Prick the chicken skip in a few places with a sharp knife.
- Spit roast the chicken until cooked (about 1¼ hours), or roast it in a baking tray, basting it once or twice during cooking.
- If roasting, check that the skin is crispy towards the end of the cooking time and increase the temperature if necessary.
- Serve with either fries or salad depending on your taste!
