Hobnob Biscuits
We’re not big on biscuits generally but these hobnobs are just irresistible! The only problem we have is that they appear to disappear rather quickly!
Hobnob Biscuits

Ingredients
- 150 g Caster Sugar
- 150 g Self Raising Flour
- 120 g Oats rolled or porridge oats
- ½ tsp Baking Powder
- 150 g Butter
- 1 tbsp Milk
- 2 tbsp Golden Syrup
Instructions
- In a large bowl cream the butter and sugar until light and creamy. We use a mixer but you can do this by hand if you would prefer

- Add the milk and golden syrup and mix into the mixture well
- Sieve the flour and baking powder into the bowl and fold in gently with a metal spoon
- Add the oats, fold in with the metal spoon and then place the entire mixture into the fridge for at least half an hour

- When ready to cook, heat the oven to 150°C, Gas Mark 2
- When the oven is hot, make the mixture into little balls (just a bit smaller than a golf ball) and place on a baking tray lined with baking parchment about 5cm apart. The balls will spread when cooked.

- When the tray is full cook the biscuits for 25 minutes and then check for colour. This process cannot be rushed as it will just result in burnt biscuits
- When cooked leave on the baking tray for 10 minutes to start to cool and then transfer to a cooling rack.
- Once completely cool, store in an airtight container and eat within a week.
