Coleslaw
Almost everyone loves a bit of coleslaw but shop bought coleslaw can sometimes be quite heavy. Making your own coleslaw is so easy and so much more tasty. Useless fact … coleslaw comes from the Dutch ‘koolsla’ meaning cool (‘kool’) cabbage (‘sla’). This is a traditional coleslaw recipe, try adding some juliennes of apple or maybe cheese, or both, the variations on this basic dish are endless!
Coleslaw
Servings: 4 people

Ingredients
- ¼ White Cabbage
- 2 large Carrots peeled
- 3 tbsp Cider Vinegar
- 1 tsp Sugar
- ½ tsp Salt
- 200 g Mayonnaise
- 1 tsp Mustard any but we tend to use dijon or bourgogne
Instructions
- Julienne or shred or finely chop the carrots
- Do the same with the cabbage
- Place in a bowl and add the vinegar, sugar and salt. Mix well and leave for 20 minutes to just start to slightly pickle the vegetables
- Mix the mustard with the mayonnaise and add to the coleslaw mix by putting in ⅔ first and then add the rest if it is needed. Don't overdo it, you don't want it swimming in mayonnaise and the mix is delicious on salads, in burgers, on bread or just about on anything else so it won't go to waste!
