Mediterranean Sausage Casserole
This is a classically mediterranean dish, although entirely anglicised by us. It uses good quality sausages (why not try making your own homemade sausages, Lincolnshire Sausages or Cumberland bangers), red onions, vibrant red peppers and delicious basil. It is one of those dishes that shouldn’t just be reserved for winter months, it can be eaten at any time of the year. We like it served with crusty bread and a glass of something cold!
Mediterranean Sausage Casserole

Ingredients
- 6 Sausages good quality!
- 1 Red Onion cut into eighths
- 1 Red Pepper deseeded and chopped into 2cm square pieces
- 1 Green Pepper deseeded and chopped into 2cm square pieces
- 1 Yellow Pepper deseeded and chopped into 2cm square pieces
- 1 can Cherry Tomatoes the best you can get
- 200 ml Chicken Stock
- 1 handful Basil Leaves
- 1 tbsp Olive Oil old slag, save the extra virgin for salads
- ½ tsp Salt natural sea salt is best
Instructions
- Put the red onion which you have cut into eighths (quarter it and then cut each quarter in half) into a roasting dish along with the peppers and the sausages. Add the olive oil and the salt and rub it into all of the vegetables and sausages with your hands
- Place the roasting dish in a preheated oven to Gas Mark 4, 180°C and bake for 30 minutes. Whilst it is baking take the can of cherry tomatoes and blitz them with a hand blender or food processor. (This may seem odd but it makes the very best passata like tomatoes!)
- After 30 minutes, take the roasting dish out of the oven, add the tomatoes, chicken stock and basil leaves and give it all a good stir. Return to the oven for another 30 minutes. Serve with a large hunk of crusty bread and a glass of something cold!
