Sole in Lemon Butter and Caper Sauce

This recipe is based on a dish once eaten in a restaurant in London. On the original restaurant menu was plaice in a lemon butter and caper sauce but they had run out of plaice and offered sole instead. It was, quite honestly, memorable for all the right reasons. It is delicious and so simple. We buy whole Dover Sole and fillet it ourselves but shop bought sole fillets are perfectly good. It doesn’t have to be Dover Sole, Lemon Sole will work too and, if you want to try the original, plaice. We’re not going to try and show how to fillet the sole here, there are many, many YouTube videos that show that better than we can! We served this with runner beans from the garden but any green vegetable will work!

Sole in Lemon Butter and Caper Sauce

Ingredients

  • 4 Fillets of Sole Dover or Lemon
  • 120 g Butter
  • 1 Lemon juiced
  • 2 tsp Capers

Instructions

  • Melt 100g of the butter in a pan and, once melted, add the juice of a lemon and the capers and mix well. Leave to bubble whilst you cook the sole
  • Melt the remaining 20g of butter in a large saucepan over a medium heat. Add the sole fillets and cook for 30 seconds on each side
  • Place the sole fillets on a plate and pour over the lemon butter and caper sauce and serve immediately. Enjoy!
