Balti Garam Masala
This is an absolute must if you are going to cook balti dishes. It is pretty simple and quick to make but it definitely requires a coffee grinder (or spice grinder). It really does make a bit difference to a balti dish.
Balti Garam Masala

Ingredients
- 7.5 g Black Cardamom Seeds just the seeds not the pods, the hardest part of making this masala
- 7.5 g Green Cardamom Pods whole
- 7.5 g Cinnamon Sticks or cassia bark
- 7.5 g Cloves
- 7.5 g Cumin Seeds
- 7.5 g Black Peppercorns
- 1 whole Nutmeg lightly crushed
Instructions
- Put all the spices in a pan and gently roast to release their oils. Don't allow them to change colour, you just want to release flavour. Allow them to cool
- Put the spices in a coffee grinder (or spice grinder if you're posh!) and grind for about 2 minutes to a fine powder
- Store the garam masala in an air proof container and it will keep for about six months and remain fresh
