Curried Couscous

To go with our chicken and broccoli tagine, we like some curried couscous which just adds to an already spectacular dish! This is our favourite recipe.

Curried Couscous

Ingredients

  • 250 g Couscous
  • 720 ml Chicken Stock
  • 1 tbsp Curry Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper freshly ground
  • 2 tbsp Olive Oil
  • 80 g Raisins
  • 1 bunch Coriander fresh

Instructions

  • Pour couscous into a bowl. Mix chicken stock, curry powder, salt, pepper, olive oil and raisins in a saucepan and bring to the boil; remove from heat
  • Pour the boiling liquid over the couscous. Seal the bowl with cling film and allow to sit for 10 minutes. Fluff couscous with a fork. Top with the coriander
