Chicken Satay with Satay Sauce
This is actually the second chicken satay recipe we’ve added to our site. The first one we serve with pickled cumber salad and crispy asian dressed salad but we found that simple rice was better with this version. The great thing is that you can cook this in the air fryer and it works really well!
Chicken Satay with Satay Sauce
Servings: 4 people

Equipment
- 8 Wooden Skewers Or steel ones
- Air Fryer You can cook it under a grill or on the barbecue if you prefer
Ingredients
Marinate for Chicken Skewers
- 2 large Chicken Breasts cut into strips about 1cm wide
- 2 cloves Garlic grated/minced
- 1 tbsp Dark Soy Sauce
- ½ tsp Cumin Powder
- ½ tsp Ground Coriander
- ¼ tsp Ground Ginger
- 200 ml Coconut Milk buy the one from Thailand, it is by far the best
Satay Sauce
- 3 tbsp Smooth Peanut Butter heaped
- 1 tbsp Fish Sauce you can get fish sauce in most supermarkets nowadays
- 1 tbsp Light Brown Sugar
- 1 tbsp Dark Soy Sauce
- ½ tsp Ground Coriander
- ½ tsp Chilli Flakes use a little more if you like it warmer
- 200 ml Coconut Milk basically the other half of the tin you used for the marinade
- 1 Lime juice only
Instructions
- Put all the marinade ingredients into a bowl and mix well. Add the chicken and massage the marinade into it. Place in the fridge to marinate for 1 hour but longer if possible
- 1 hour before you are going to cook the chicken soak the wooden skewers in water to stop them burning when you cook. If you're using metal skewers you can skip this step!
- Whilst the skewers are soaking put all the ingredients for the satay sauce into a small saucepan, except the lime juice, and heat it through. At first it will seem very runny but as it heats it will become thicker and creamier. Don't let the sauce boil. Once it is ready remove from the heat and set aside. You can re-heat before serving
- Thread the marinated chicken onto the skewers. Set the air fryer to 200℃ and cook the satay chicken for 15 minutes. Whilst the chicken cooks, re-heat the sauce and then remove from the heat and stir in the lime juice
- Service the chicken satay garnished with a few slices of red chilli and spring onion with the sauce in a bowl on the side
