Leek and Potato Soup
This simple yet delicious leek and potato soup recipe is a one that we make and eat on a very regular basis! It is very tasty and can be eaten immediately. It is also cheap to make and it happens to be a vegan dish too. In our opinion never add cream to this soup – it’ll ruin it!
Leek and Potato Soup

Ingredients
- 1 medium White Onion chopped
- 2 large Potatoes peeled and chopped
- 3 large Leeks sliced
- 1 ltr Vegetable Stock home made is brilliant, shop bought is ok
- Salt to taste
Instructions
- Gently fry the onion in a little rapeseed or similar oil until it is softened slightly
- Add the potatoes and leeks and fry for a few minutes until it just starts to cook and then add the stock

- Cook the soup for 30 minutes and then take it off the heat and blitz it in a liquidiser or hand blender and then pass through a sieve into a clean pan

- Return to the heat and warm through for 5 minutes and serve with some freshly ground black pepper and good quality bread
