Piri Piri Chicken

One of our friends couldn’t have any salt in his diet because he was on dialysis. When he came for dinner we wanted to serve something flavoursome because he had said that the lack of salt made food taste bland. This seemed to do the trick!

Piri Piri Chicken (salt free)

Ingredients

  • 4 Skinless Chicken Breasts
  • 2 Fresh Red Chillies deseeded and finely chopped
  • 1 clove Garlic finely chopped
  • ½ tsp Dried Oregano
  • 1 tsp Paprika
  • 3 tsp Olive Oil
  • 1 Lemon juiced
  • 1 Red Pepper deseeded and cut into small chunks
  • 1 Red Onion sliced or cut into thin wedges
  • Freshly ground black pepper to taste

Instructions

  • Score a couple or so of deep slashes in each piece of chicken using a sharp knife. Combine chilli, garlic, oregano, paprika, 2 teaspoons of the olive oil, the lemon juice and black pepper in a bowl. Add the chicken, turn to coat all over and massage into the meat. Cover and leave to marinate in a cool place for 30 minutes
  • Preheat oven to 200ºC/180ºC fan/gas mark 6. Put the red pepper and red onion into a non-stick roasting tin, add the remaining olive oil and toss to coat. Add the chicken to the roasting tin, nestling it among the vegetables
  • Roast in the oven for 30-40 minutes or until the chicken is thoroughly cooked and piping hot, stirring the vegetables and turning the chicken over about halfway through cooking
