Pasta is so easy to make and lots of fun too. Once you make the pasta dough you can shape it into anything you want; spaghetti, tagliatelle, pappardelle, lasagne sheets, or even more adventurous pastas like ravioli, penne or rigatoni.

Homemade Pasta

A pasta portion is simply 1 egg to 100g of Tipo "00" pasta flour. If you want to make pasta for a different number of people simply multiply the quantity of eggs and flour by the number of people.

Ingredients

  • 400 g Pasta Flour tipo 00
  • 4 Eggs

Instructions

  • Put the flour in a bowl and make a well in the middle of it
  • Break the eggs into a separate bowl and whisk them with a fork
  • Pour the eggs into the well you have made in the flour and mix, bringing in a little more flour gradually until you have brought the whole lot into a ball
  • Once you have a ball of dough you need to knead it. Put the ball on a floured surface and knead until the dough is smooth and elastic. If it still feels rough and floury it isn't done! It takes about 10-15 minutes but it really is worth the effort!
  • One the ball of dough is smooth and elastic, wrap it in cling film (or better still a biodegradable ziplock bag – we're not keen on cling film if we can avoid it) and put in the fridge for at least half an hour
  • After at least half an hour in the fridge, bring it out and roll it out to be shaped into whatever pasta you are going to use!
