Tasty Mussels with Tomato and Pasta
We found this original recipe from Nigella Lawson (who we call Saint Nigella in our household). We have slightly adapted it by reducing the amount of parsley added at the end. This has to be one of the the quickest and easiest recipe on FoodThatWeEat.com as it is simple and cooked in one pan. It is really well worth a try!
Tasty Mussels with Tomato and Pasta

Ingredients
- 1 kg Mussels
- 250 g Cherry Tomatoes we try to buy heritage tomatoes when we can
- 250 g Ditaloni Pasta if you can't get it macaroni will be ok
- 2 cloves Garlic
- 1 pinch Chilli Flakes
- 1 tbsp Olive Oil old slag is best, save extra virgin for salads!
- 1 tbsp Parsley chopped
Instructions
- Wash the mussels and discard any that are broken or are open and don't start to close when they are tapped on a hard surface
- Boil some water in a large pan and, when boiling, add the pasta and cook according to the packet timings (usually about 12 minutes)
- Heat the olive oil in a sauté pan over a medium heat. Cut the tomatoes in half and add them to the warmed oil. Cook gently to soften them.
- When the tomatoes are softening, grate the garlic over the tomatoes and then add the pinch of chilli flakes. Stir well.
- Add the mussels to the pan, cover and cook for 4 minutes until they have all opened.
- Add the cooked and drained pasta to the pan and mix well.
- Sprinkle with the parsley and serve immediately. Enjoy with a glass of sauvignon blanc!
