Baked Goat’s Cheese and Tomato

Now before you click away from this recipe, don’t … it’s worth hearing us out. We love goat’s cheese but we know it isn’t for everyone. This recipe would work with brie or camembert, but a mild goat’s cheese would do equally as well. If you try nothing else on this website, try this! It is delicious and so simple to prepare. You will need some crusty bread to soak up the juices, but you won’t regret it. If you are using brie or camembert you will need a round cutter to cut yourself a piece of cheese to suit the dish.

Ingredients

  • 1 Goat's Cheese just a round goat's cheese of your choice
  • 6 Cherry Tomatoes halved
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Red Wine Vinegar
  • 1 pinch Salt sea salt crystals are ideal

Instructions

  • This is almost embarrassing. It is hardly a recipe, but we had to put it here. Put the goat's cheese in the middle of an oven proof dish and arrange the halved cherry tomatoes around it
  • Drizzle with the extra virgin olive oil and the vinegar. Season liberally with the salt.
  • Put into a pre-heated oven at Gas Mark 5, 190℃, (170℃ Fan) and bake for 20 minutes. Serve with crusty bread and a glass of something chilled!
