Tarte aux Pommes
Somehow any recipe site without a decent recipe for Tarte aux Pommes doesn’t seem right. Apples are a classically English fruit but the French have really made this a signature dish for the country. We love it!
Tarte aux Pommes

- 500 g Puff Pastry buy it – life's too short to make it!
- 6 Apples granny smiths are good, but any slighly sour apple will do
- 2 Apples gala is good, but any sweet apple will do
- 20 g Butter
- 4 tbsp Caster Sugar
- 5 tbsp Apricot Jam
Instructions
- Preheat the over to 200°C, 180°C, gas mark 6
- Peel, core and slice the gala apples (or other sweet ones that you might be using. Put them in a pan along with one tablespoon of caster sugar and heat gently until the apples have cooked down to a purée. Put aside to cool
- On a lightly floured surface roll out the puff pastry to make a circle about 30cm in diameter and about 3mm in thickness. Using a knife score all the way around about 1cm from the edge of the pastry – make sure you don't go all the way through the pastry. Take a fork and prick the pastry inside the circle you have just made with the knife all over – be as rough as you like!
- Spread the apple purée you made earlier over the pastry but be careful not to cross the line you scored around the edge
- Peel, core and slice the granny smith apples (or alternatives that you may have) into relatively thin slices and arrange them in a circle on the pastry starting from just inside the line you scored and overlapping each slice to leave about 1cm of each slice exposed
- Melt the butter in a pan and then add the sugar. Stir until melted and then brush the mixture all over the apples
- Bake the tart in the oven for around 30 minutes until the pastry is golden brown and the apples are well coloured. Carefully lift the tart to ensure that the bottom is cooked and crisp – nobody likes a soggy bottom!
- Heat the jam very gently in a pan with a splash of water. When it is good and runny, sieve the jam and brush it all over the tart to make a very smooth glaze. Serve with cream, custard or just on its own
