Bolognese Sauce
It almost seems ridiculous to put bolognese sauce on FoodThatWeEat because everyone has their own recipe but we really like this recipe and always make it at least one day before we eat it to let it mature.
Bolognese Sauce
Servings: 4 people

Ingredients
- 500 g Minced beef at least 12% fat
- 1 large White Onion chopped
- 2 cloves Garlic finely chopped
- 400 g Tin of Cherry Tomatoes the best you can buy
- 1 tsp Sugar
- ½ tsp Salt
- 1 pinch Freshly Ground Pepper a large pinch!
- 1 tbsp Tomato Ketchup yes, you did read that right!
Instructions
- In a large saucepan gently fry the onion to soften it but not colour it. When it is softened add the garlic
- After 2 minutes add the mince and cook until fully browned all the way through
- When the mince is fully browned at the tomato ketchup (there is no substitute and trust us you'll find ketchup in every professional kitchen whatever they say!) and mix thoroughly cooking until the oils just start to seep out of the ketchup
- Blitz the tomatoes briefly in a food processer or with a hand blender and add them to the saucepan. (Tomato is the main flavour of this mince dish so get the best you can!)
- Fill the can half way with water and add that to the pan along with the sugar, salt and pepper
- Cook for at least an hour and taste regularly for seasoning. Once cooked leave for at least 24 hours to mature before serving with your favourite pasta, baked potato or however else you like your bolognese sauce!
