Chicken & Chorizo Bake
Chicken and Chorizo Bake is one of those mid-week comforting dishes that simply can’t go wrong and never does. It is tasty, slightly spicy and comforting in every way. One thing we should say though is that chorizo really does need to be pronounced correctly. The z in chorizo is pronounced as a ‘th’ so phonetically it would be cho-ree-tho. Even professional chefs seem to find this simple Spanish word difficult to pronounce!
Chicken and Chorizo Tray Bake
A simple but tasty tray bake with chicken thighs, baby potatoes, peppers and chorizo.

Ingredients
- 4 Chicken Thighs bone in and skin on
- 2 Red Peppers (or a mix of red and yellow) deseeded and chopped into 2cm pieces
- 1 Green Pepper deseeded and chopped into 2cm pieces
- 3 Cloves of Garlic skinned but not chopped
- ½ Chorizo Sausage half of a standard chorizo ring
- 500 g Baby Potatoes halved
- 4 tbsp Olive Oil old slag, not extra virgin!
- 1 tbsp White Wine Vinegar
- 1 tsp Salt fine sea salt is best
Instructions
- Pre-heat the oven to Gas Mark 4, 180°C.
- Put all of the ingredients into a baking tray, pour over the oil and massage it into everything. Add the salt and toss all the ingredients together. The salt is essential to bring out the flavours.
- Bake for around 90 minutes until the potatoes have roasted in the juices, the chorizo has cooked and coloured slightly and the chicken thighs are cooked. Enjoy with a decent glass of red and maybe some crusty bread!
