Fig Salad with Parma Ham and Mozzarella Cheese

This salad is so simple but utterly delicious. We first saw Jamie Oliver do this salad about 15 years ago. We’re not sure how close this recipe is to his as we have never written it down but it can’t be that far apart, it only has three ingredients!

Fig Salad with Parma Ham and Mozzarella Cheese

Ingredients

  • 4 Fresh Figs
  • 8 slices Parma Ham we were originally going to do this with serrano ham but we couldn't get any!
  • 150 g Mozzarella Cheese don't buy the 'supermarket' stuff, buy real Italian mozzarella – it's one of the key players in this salad!
  • 30 ml Olive Oil virgin is best for this
  • 10 ml Lemon Juice
  • 1 handful Basil Leaves
  • Salt & Pepper to taste
  • 1 glass Rosé Wine cold

Instructions

  • This salad is one of the simplest salads to make but utterly delicious. Cut the figs nearly all the way through from the top, turn through 90 degrees and cut again. Push the bottom of the fig together and it will splay outwards at the top
  • Tear the ham a little and drape over the figs
  • Tear the mozzarella cheese into bite sized pieces and drop all over the salad
  • Drop the basil leaves over the salad and get ready for the difficult part …
  • … make the dressing by combining the oil, lemon juice and a little salt and pepper and pour over the salad to dress it. Don't put too much on, we are not looking to drown it!
  • Take the glass of Rosé wine and enjoy with the salad!
