French Onion Soup
There are hundreds of recipes for French Onion Soup out there. We have tried many but this one is the one which we return to time and time again. The real trick here is to cook the onions very, very slowly – be patient, if they are allowed to go the slightest bit brown the soup will become bitter and nasty!
French Onion Soup

Ingredients
- 1 kg White Onions very finely sliced
- 150 g Butter
- 2 ltrs Chicken Stock
- 1 French Baguette
- 100 g Comté Cheese grated
Instructions
- Gently fry the onions in the butter until they have softened and turned golden. Do not allow them to brown – it will make the soup bitter. This usually takes around 45 minutes on a very low heat

- Once the onions are soft and golden, add the stock and bring to the boil

- Simmer for 30 minutes and then ladle into oven proof bowls

- Place a slice of bread into each bowl, sprinkle liberally with the cheese and place under a pre-heated grill until the cheese has melted and serve immediately
