Our Caesar salad

We first saw this on the telly with Rick Stein. Although we followed the recipe exactly, we found that we wanted to adjust the ingredients somewhat to suit our taste.

Our Caesar salad

Ingredients

  • 3 tsp Anchovies crushed in oil
  • 2 tsp Dijon Mustard
  • 2 tsp Garlic grated
  • Black Pepper
  • splash Worcestershire Sauce
  • 1 Egg Yolk
  • ½ Lime juiced
  • Olive Oil
  • Rapeseed Oil
  • 1 tbsp Parmesan Cheese plus more to garnish
  • 1 Romaine Lettuce

Instructions

  • In a large bowl (big enough to turn whole romaine lettuce leaves in), add the crushed anchovies, dijon mustard, garlic, black pepper, Worcestershire sauce and the egg yolk
  • Whisk the mixture and drizzle in the oil mix whilst continuing to whisk
  • Add the tablespoon of parmesan cheese and mix in
  • Using whole romaine lettuce leaves, turn them gently in the sauce so that they are fully coated
  • Serve 4-5 leaves per portion and grate over more parmesan cheese
