Poor Man’s Cassoulet

OK, let’s be up front about this, this is not a cassoulet in any kind of true sense, but it is a casserole with beans and meat. Cassoulet is not cheffy, prescriptivist stuff. It’s a medieval peasant dish designed to make do with whatever was around. According to the Académie Universelle du Cassoulet cassoulet does not even have to use confit duck or goose, it can use any meat. So, here is our ‘Poor Man’s Cassoulet’ which just uses sausages! Try it, it is worth it!!

Poor Man’s Cassoulet

Ingredients

  • 1 large Onion we use white onions for this and chop them roughly
  • 3 cloves Garlic roughly chopped
  • 8 Pork Chipolatas or 6 pork sausages
  • 400 g Chopped Tomatoes one tin, in other words!
  • 1 jar White Beans use jarred, they are so much better than tinned!
  • 1 Chicken Stock Pot stock pots are less salty than stock cubes
  • 100 ml Water
  • 3 tbsp Olive Oil old slag, save the extra virgin for salads and other dishes where it matters!

Instructions

  • The first thing to do is to cook the sausages or chipolatas. Bake them in the oven for about 30 minutes with a little oil
  • Put the oil in a large pan or casserole and, once hot, add the onions and cook for about 5 minutes on a medium to high heat to soften them. Once the onion has softened, add the garlic and cook for 2 minutes
  • Next add the cooked sausages or chipolatas and cook for 2-3 minutes. This just helps to flavour the dish. After 2-3 minutes add the tomatoes and cook for a further 2-3 minutes
  • Drain the beans (we say white beans because this is what the French generally call them … haricot is what most of them are!) and add them to the dish. Pop in the stock pot and the water, give it a stir
  • Cover the pan and cook on a low heat for 25-30 minutes. You can keep it warm for as long as you like now. Serve with some lovely crusty bread and enjoy!
