Rhubarb & Ginger Cordial

Rhubarb and ginger cordial is a slightly firy but refreshing drink at any time but particularly on a warm day. Serve over ice with sparkling water but still is just as good! This will keep in the fridge in a steralised bottle for several weeks.

Rhubarb & Ginger Cordial

Ingredients

  • 500 g Rhubarb cut into roughly 25mm lengths
  • 1 Lemon juiced
  • 4 cm Root Ginger peeled and roughly chopped
  • 250 g Caster Sugar
  • 500 ml Water

Instructions

  • Put everything in a heavy bottomed pan and bring to the boil
  • Simmer for 15 minutes and then remove from the heat
  • Sieve the cordial though a sieve and make sure you push the fruit to get the maximum amount of juice from it
  • Make a drink with 1 part cordial and 2 parts water. Enjoy!
