Spicy Pork Fillet
We can’t believe we haven’t added this to the website before now. This has been a staple summer eat for at least 20 years!! Spicy pork fillet is just what it says. We usually serve it with a salad because it doesn’t need anything to compete with the flavours. Basically the pork is a vehicle for flavour. Don’t misunderstand this, the pork is essential to the dish but the flavour all comes from the marinade. We do this for 2 people but just double the size for 4 people. Pork fillet usually comes in 200g pieces. We cut it in half and either use the other half for another dish or freeze it for later use. Enjoy!
Spicy Pork Fillet
Servings: 2 people

Ingredients
For the marinade
- ½ tsp Paprika not smoked!
- ½ tsp Ground Cumin
- ½ tsp Turmeric
- ½ tsp Ground Ginger
- ½ tsp Chilli Powder
- ½ tsp Salt
- ¼ tsp Black Pepper freshly ground
- ½ tbsp Worcestershire Sauce
- ½ tbsp Tomato Purée
- 1 tbsp Soft Brown Sugar
- 1 splash Olive Oil
Add the pork!
- 100 g Pork Fillet also known as tenderloin
Instructions
- Mix all of the marinade ingredients together in a bowl and mix well

- Add the pork to the marinade, make sure it is well covered and marinate for at least 30 minutes, 1 hour is better

- Pre-heat the oven to 180℃ fan, 200℃, gas mark 6. In a frying pan that can be put in the oven, add a splash of olive oil and fry the pork fillet over a high heat to seal on all sides (about 1 minute per side). Once browned, transfer to the oven for 8-10 minutes until cooked through

- Once cooked, leave the pork to rest for 5 minutes whilst you prepare a simple salad to go with it and then carve. Serve with the salad and enjoy!
