Spicy Sausage & Bean One-Pot
This is an adaptation of a recipe that we found on the internet. In the original there was a can of beans in chilli sauce which we really did not enjoy. Ultimately we substituted them for tomatoes and fresh chilli. Use the best quality sausages you can, or why not make your own homemade sausages, Lincolnshire Sausages or Cumberland bangers.
Spicy Sausage & Bean One-Pot

Ingredients
- 1 tbsp Rapeseed Oil
- 1 Onion thickly sliced
- 8 fat Sausages chipolatas won't do!
- 1 clove Garlic crushed
- 800 g Kidney Beans that's two standard sized cans!
- 400 g Peeled cherry tomatoes whizzed in a processor (the peeled cherry tomatoes are worth it!)
- 500 ml Chicken Stock
- 2 fresh Red Chillies
- 3 sprigs Parsley chopped
Instructions
- Heat the oil in a large frying pan. Cook the sausages over a fairly high heat for 8-10 mins, turning them often so they brown all over
- Remove the sausages from the pan, add the onions and cook gently until they are soft and golden in colour
- Add the garlic to the pan along with the kidney beans, the sausages, the tomatoes and the chicken stock. Stir everything together and bring to the boil. Turn down to simmer and cook until the sauce has thickened and the sausages are well cooked. Season and sprinkle with the parsley
