Sweetcorn Fritters
Sweetcorn fritters are just the ultimate lunchtime snack. Tasty, slightly spicy and so easy to make they’re on the table in minutes. We like them served with spicy mayo to dip them into as it adds another dimension. These are very low in calories, completely vegan and, best of all, very cheap to make!
Sweetcorn Fritters
Servings: 2 people

Ingredients
- 100 g Sweetcorn tinned (drained)
- 2 tbsp Gram Flour heaped
- 1 tsp Cornflour
- 3 Spring Onions finely sliced
- 1 Red Chilli finely sliced
- 1 tbsp Milk
- Salt & Pepper to season
- 2 tbsp Mayonnaise we use vegan mayo, it is just as good!
- 1 tsp Sriracha Sauce
- ½ tbsp Oil we use rapeseed generally but any non-flavoured oil works
Instructions
- Mix the gram flour and the cornflour together in a bowl (we use gram flour as one of us is intolerant of wheat flour). Add the spring onions and the chilli to the flour along with the drained sweetcorn and mix
- Carefully add the milk until you have the consistency of thick double cream. Season with the salt and pepper
- Heat the oil in a frying pan and, when hot, add the fritters. We use a metal ring to form the fritters as you can spoon the mix into the ring and press down to form a round fritter. Fry on each side for five minutes
- Whilst the fritters are frying, put the mayonnaise and the srirachca sauce into a small bowl or ramekin and mix together. Once the fitters have fried for 5 minutes on each side they will be cooked through and can be served with the spicy mayonnaise. Delicious!
