Triple Choc Cookies

This is a recipe we used in the domestic section of our annual local flower and produce show. The cookies are delicious and well worth a try! The prep time includes the time to chill, so really it is only about 10 minutes of actual prep.

Triple Choc Cookies

Ingredients

  • 250 g Butter softened
  • 140 g Caster Sugar
  • 1 Egg Yolk keep the whites for a meringue
  • 2 tsp Vanilla Extract
  • 250 g Plain Flour
  • 50 g Cocoa Powder
  • 85 g White Chocolate Chunks roughly break up a bar of white chocolate
  • 85 g Milk Chocolate Chunks roughly break up a bar of milk chocolate

Instructions

  • Mix the butter and sugar in a large bowl with a wooden spoon, then add the egg yolk and vanilla extract and briefly beat to combine.
  • Sift over the flour and cocoa and stir until the mixture is well combined, add the chocolate chunks and mix well– you might need to get your hands in at the end to give everything a really good mix and press the dough together. Chill for 20-30 mins.
  • Preheat the oven to 180oC/160oC fan/gas mark 4. Take the dough mixture out of the fridge and divide into 12 large balls. Put them on a baking tray lined with baking parchment and flatten them slightly
  • Bake for 12-15 minutes, then carefully transfer the soft cookies to a cooling rack to harden up.
  • Once cooled, enjoy!!
