Super Marie Rose Sauce

There is Marie Rose sauce and there is Marie Rose sauce. The former is a rather lack lustre mixture of mayonnaise and ketchup. This is then presented as Marie Rose sauce on a prawn cocktail or avocado with prawns. The latter is a spicy, flavoursome, sauce that has real depth of flavour and a roundness that enhances the flavour of the dish. This recipe is, without question, the latter!

This can easily be made vegan by using a vegan mayonnaise and Henderson’s Relish Worcestershire sauce.

We find it easier to weigh the ketchup and mayonnaise directly in the mixing bowl, but the tablespoon quantities are also shown.
