Chocolate Mousse

This is a simple chocolate mousse that we tend to make when we have some surplus egg whites (like when we make Lemon Curd). It is simple to make and delicious to eat. What more could you want?

This recipe makes two portions to use the egg whites from the lemon curd recipe to consider doubling the quantity for 4 servings!

Chocolate Mousse

Ingredients

  • 75 g Dark Chocolate 70% cocoa, grated
  • 60 g Low Fat Yoghurt
  • 2 large Egg Whites
  • 10 g Caster Sugar

Instructions

  • Melt the chocolate in a heatproof bowl over a pan of simmering water, making sure the bowl doesn’t directly touch the water. Once melted, allow it to cool for 5-10 mins, then stir in the yogurt
  • Whisk the egg whites until stiff, then whisk in the sugar and beat until stiff again. Fold the whites into the chocolate mix – loosen the mixture first with a spoonful of egg white, then carefully fold in the rest, keeping as much air as possible.
  • Chill in the fridge until set
