Strathbogie Mist
This is a look back to the 1970s but don’t let that put you off. Once a very popular dish, Strathbogie Mist fell out of favour in the 1980s and onwards but today it is a dish that proves it can stand the test of time. Everyone we serve this dish to absolutely loves it, so that just shows it deserves to be on this site! Give it a try, it really does taste good!
Strathbogie Mist
Servings: 4 people

Ingredients
- 400 g Pears in Juice one standard tin
- 300 ml Double Cream
- 75 ml Ginger Wine
- ½ Lemon grated rind and juice
- 60 g Caster Sugar granulated will do too
Instructions
- Lightly mash the pears and place in the bottom of four individual dessert glasses (or any glass that you have to hand). Mix the sugar, lemon juice, lemon rind and ginger wine until the sugar has dissolved
- Mix the combined sugar, lemon, ginger wine and sugar with the cream and whisk to a lightly whipped consistency. Pile the cream on top of the pears and chill for at least 1 hour
- Served chilled with shortbread biscuits (optionally). Enjoy!
